Pancakes – a childhood favourite, Shrove Tuesday special and all-time breakfast treat. There aren’t many things that beat a scrumptiously fluffy pancake, smothered in maple syrup with a scoop of ice-cream. And while the traditional pancake recipe should be enjoyed in moderation, healthy alternatives can be made to calm your pancake cravings, without all the added nasty’s.

Cacao Pancakes

Ingredients:

  • 1/4 cup wholemeal spelt flour
  • 1/4 cup plain flour
  • 1 tbs cacao powder
  • 1 banana mashed
  • 5 tbs almond milk
  • 2 tsp baking powder
  • 2 eggs
  • 1 tsp ground cinnamon
  • 1/2 tsp extra virgin coconut oil
  • 1 tsp maple syrup *to serve
  • 1 banana sliced *to serve *extra

Banana Oatmeal Pancakes

Ingredients:

  • 1 1/2 cups rolled oats
  • 2 tsp baking powder
  • 1/2 tsp cinnamon
  • 2 large ripe bananas
  • 1 tbsp maple syrup
  • 1 egg
  • 1 cup unsweetened almond milk (or other milk)
  • 1 tsp vanilla
  • pinch of sea salt
  • coconut oil, for cooking
  • optional add-ins: chocolate chips, mixed berries, nuts

Paleo Coconut Flour Pancakes

Ingredients:

  • 1/4 cup + 2 tablespoons coconut flour
  • 1/2 cup + 2 tablespoons unsweetened almond milk coconut milk blend (or any kind of almond milk)
  • 2 teaspoons baking powder
  • 4 large eggs
  • 2 tablespoons honey (or maple syrup)
  • 1–2 teaspoons coconut oil or coconut oil cooking spray

  • 1 and 1/4 cups (300ml) milk

  • 2 tablespoons poppy seeds
  • 2 tablespoons brown sugar (or 2 1/2 tablespoons maple syrup)
  • 2 eggs

  • 1 large lemon (zest + 3 tablespoons fresh lemon juice)
  • 3 tablespoons melted coconut oil (or butter)
